Inspired by the savory Indian vegetarian street food, these pan-fried potato patties are battered with chickpeas flour, and placed inside a bread bun sliced almost in half through the middle. The pickled twist of various beans whisked together with fresh raw onions, peppers, cilantro that are tossed in vinegar and characteristically sweetened with sugar.
